How much brisket do we need to buy for pulled bbq brisket for 100 people?

Congrats, hope it goes well, and for brisket hmmm. A wholesale size brisket can feed about 3-4 people depending on size, 30-35 briskets. and by pounds one person usually eats around half a pound (8 ounces) or 50 pounds. or its a course menu, go for (4 ounces) or 25 pounds

Wow thats a lot of mouths to feed! Congratulations on your wedding...to serve 100 is more then just buying the meat, its also the prep and cooking time for that amount. Wish I could give you some sort of good formula to follow, here are a few recipies you could go over with her and decide how much time she wants to put into this as well as try a few of the recipies and decide which one you both really like!

About 35 lbs raw, some will eat more some less. allowing for 1/3 pop children if not 40 lbs or so

Daily Fiber Films' Bare Nekked

Daily Fiber Films' popular web series, The Bare Nekked Chef, recently ventured out of the kitchen studio and into the heart of the bustling New York Big Apple BBQ for a special summertime episode featuring special guest stars and Big Apple BBQ pit masters Carey Bringle and Martin's BBQ Joint.


"Raymond Ray" host of Daily Fiber Films' original series THE BARE NEKKED CHEF is a fun, down home southern party host who eats and "cooks" like a man who refuses to grow up. Past episodes featuring awful recipes such as the Bologna Bowl, Hand Spaghetti, and the Morning Muggie,, have attracted a loyal, growing fan base passionate about Raymond Ray's suspect creations. Raymond Ray's culinary abilities are on par with that of an eight-year-old left at home alone to make his own after school snacks. The ridiculous concoctions and his cleavage filled, trashy-funny friends combine to make the comedy addictive, even if the food is not.


"This character and his recipes are completely taken from myself and friends making horrible food growing up when our parents weren't around", says creator Raymond McAnally, who has southern roots of his own. "When two of my oldest and dearest friends, Bo Collier and Ward Boone (seen in the video) were invited to cook with Martin's BBQ Joint for the Big Apple BBQ Block Party, I knew we had to make an episode. Moving the show temporarily on location and featuring guys who are famous in the BBQ community puts a whole new twist on the webisode's format - and for the fans, it places the Bare Nekked Chef into a wholly new and different situation. "


The episode shows the host using the BBQ festival as an opportunity to demonstrate his recipe for "Boneless BBQ Baby Food," a grotesque concoction that he joyously cooks up for a recently impregnated sidekick. "My friend Louis Wells, a new daddy of twins,thought up the recipe and some incredibly fun and talented friends signed on to make the shoot possible," said McAnally, "We had a blast shooting this and I think it comes across in the video."


McAnally also pointed out that while Martin's and the festival were the backdrop, Martin's pork BBQ is unrivaled in the real world and was not used in the comedy recipe or meant to be associated with the baby food. He says, "I eat at Martin's every time I go home to Nashville because they know great BBQ, but what the Bare Nekked Chef made today... well, that's just" not right.

Livability.com, a national website that highlights more than 500 of America?s best places to live and visit, has released a list of the Top 10 Best BBQ Cities ? Surprisingly Great Places for BBQ.


Much has been written about the smoking, saucing and rubbing going on in places like Memphis, Austin, Chicago and Kansas City ? those cities by which all other barbecue is measured. So for their list of the best places for BBQ, Livability.com editors purposely strayed from the herd, instead concentrating on those lesser known cities with a large and loyal local barbecue fan base.


To narrow down the list, editors looked at the number of barbecue restaurants, joints and shacks in a city, as well as the quality of those establishments based on customer reviews ? and in some cases, a little messy hands-on research.


"Part of what we do at Livability.com is uncover those hidden gems in cities and help them shine. So when a list of the best BBQ cities was proposed, it was decided that we wouldn't take the easy route of listing the usual suspects. Instead we'd go mining for those gems that the rest of the country might not yet have discovered," says John Hood, spokesman for Livability.com.


While some barbecue aficionados tend to favor one region over another ? Texas brisket versus North Carolina pulled pork, for example ? Hood is quick to point out that the quest for good barbecue knows no boundaries. While the entries on the Best BBQ Cities list might not pop up first on a Google search, they are sure to stir up plenty of delicious conversation.

Smoked salmon was a substitution for the Bottarga, then used in a pasta dish.

Bottarga, salt-cured mullet roe, was the inspiration for the pasta. In Sardinia they salt the roe until it is dried; then they slice it and grind some of it into a powder that is used to flavor the pasta. I used a mortar and pestle to grind smoked salmon, then I roasted the crumbs in the oven. After the pasta was drained and tossed with plenty of olive oil I sprinkled the salmon crumbs and eggplant throughout. The crumbled smoked salmon gives the pasta a fishy aroma, and the celery, onion, carrots and eggplant provide the body of the dish. Exquisite and flavorful!

Rosemary Grilled Chicken with a Tangy Orange BBQ Sauce

Ingredients:
6 medium chicken breasts, boneless
6 sprigs rosemary
1 tablespoon red chile powder
1 teaspoon garlic, minced
1 tablespoon olive oil
salt and pepper to taste

BBQ Sauce:
1 cup orange marmalade
8 ounces tomato sauce
3 tablespoons red wine vinegar
2 tablespoons red chile powder
1 pinch salt
1 tablespoon cumin
1 tablespoon brown sugar

Preparation:
Skewer chicken breasts along with rosemary sprigs.
Combine 1 tablespoon chile powder, garlic, olive oil, salt and pepper. Rub chicken breasts in this mixture. Grill over medium high heat.
Combine remaining ingredients in a sauce pan and bring to a simmer. Stir until thickened slightly. Pour over finished chicken breasts.

Char-grilled chicken breast.

Scotch fillet (char-grilled).

Marinated steak (from the butcher shop).

Thinly sliced potatoes.

Caremalised onions.

Pinapple or tomato or egg.

Grilled Potatoes and Onion

INGREDIENTS
4 potatoes, sliced
1 red onion, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons butter

DIRECTIONS
Preheat grill for medium heat.
For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.
