Smoked salmon was a substitution for the Bottarga, then used in a pasta dish.

Bottarga, salt-cured mullet roe, was the inspiration for the pasta. In Sardinia they salt the roe until it is dried; then they slice it and grind some of it into a powder that is used to flavor the pasta. I used a mortar and pestle to grind smoked salmon, then I roasted the crumbs in the oven. After the pasta was drained and tossed with plenty of olive oil I sprinkled the salmon crumbs and eggplant throughout. The crumbled smoked salmon gives the pasta a fishy aroma, and the celery, onion, carrots and eggplant provide the body of the dish. Exquisite and flavorful!
